Mini Meatloaves

Ingredients

Protocol

  1. Use a large mixing bowl to combine the ketchup, brown sugar and mustard. Remove 1/2 cup for topping; set aside.
  2. To the leftover ketchup mixture in the large mixing bowl, add the eggs, Worcestershire sauce, and crushed Crispix/Rice Chex cereal. Let this mixture flavor through in the bowl for 5-10 minutes.
  3. Add the beef to the mixing bowl with the ketchup mixture and combine well to make the meatloaf mixture.
  4. Add the meatloaf meat mixture into 18 muffin cups (about 1/3 cup each) to make your mini meatloaves.
  5. Bake the mini meatloaves at 375° for 18-20 minutes.
  6. At 10-15 minutes into the baking process, use to reserved ketchup mixture to coat the top of the mini meatloaves. Then, bake the mini meatloaves about 10 minutes longer until a thermometer reads 160°.
  7. Remove the mini meatloaves from the oven, let cool, and enjoy! BONUS! These mini meatloaves freeze very well!
