Moroccan Lentil Soup

Hearty, healthy, comfort food and you can never really go wrong in the preparation.
Ingredients
Protocol
- Saute all chopped veggies in oil in your soup pot for 5 min, stirring often.
- Add spices and saute for 2 more min, stirring often.
- Add lentils and saute for 1 more min, stirring often.
- Add vegetable broth (but really any broth - I sometimes even just boil up all the veggie remnants and strain to use as broth), water, tomato paste, bring to boil, then simmer covered for 30 min.
- Remove from heat and stir in milk, lemon, spinach.
- Garnishes you might enjoy - dollop of yogurt or sour cream, chopped sausage, fresh parsley or cilantro, jalapeno slices.
Notes:
Chop everything first. Mix all the spices in one bowl. Taste and modify accordingly.
