Moroccan Lentil Soup

Hearty, healthy, comfort food and you can never really go wrong in the preparation.

Ingredients

Protocol

  1. Saute all chopped veggies in oil in your soup pot for 5 min, stirring often.
  2. Add spices and saute for 2 more min, stirring often.
  3. Add lentils and saute for 1 more min, stirring often.
  4. Add vegetable broth (but really any broth - I sometimes even just boil up all the veggie remnants and strain to use as broth), water, tomato paste, bring to boil, then simmer covered for 30 min.
  5. Remove from heat and stir in milk, lemon, spinach.
  6. Garnishes you might enjoy - dollop of yogurt or sour cream, chopped sausage, fresh parsley or cilantro, jalapeno slices.

Notes:

Chop everything first. Mix all the spices in one bowl. Taste and modify accordingly.
