My mom got this recipe from someone in her immigrant community. It may not be Persian, but it reminds me of my culture because of the really heavy hand that my mom and I use to add the cardamom. It is also a one bowl and done recipe and everyone loves it. Best with a cup of hot Persian tea. There is also an amazing design element- you stack the diamonds into a tower. They also get better with time in the fridge!

  1. Add the water and sugar into a saucepan.
  2. Stir and heat until sugar has dissolved and then take off the heat.
  3. Add the juice of one lemon.

  1. Beat all batter ingredients for a few minutes on high with hand mixer.
  2. Pour into a greased 14 x 24 shallow pan and bang the pan a few times on the counter to pop out any air bubbles.
  3. Bake for 30 minutes at 355°F in the oven.
  4. Cool cake on counter for about 10 minutes.
  5. Pour syrup over the cake being careful to cover evenly and slowly so it absorbs.
  6. Let the cake rest for 15 minutes or longer.
  7. With a small paring knife, cut the cake in the pan on the diagonal in both directions to create diamonds that are about 1.5 inches on the long side.
  8. Arrange the diamonds in a circle pattern with points inward around the perimeter of a dish, then stack alternating the spacing so you create a tower.
