Haitian Black Rice

Black rice is uniquely Haitian and is absolutely delicious.
Ingredients
Spice mixture
Protocol
- Soak 2 cups of the black mushroom in 6 cups of water/chicken broth overnight.
- Heat 1/4 cup of oil and 2 teaspoons of spice mixture in a pot over high heat. 4. Add frozen baby lima beans. Salt to taste.
- Strain black mushroom with a cheesecloth-lined/paper towels strainer, reserve the black liquid.
- Add the liquid and bring to boil.
- Add the rice. Lower heat, cover. Cook on low heat.
- After 15 minutes uncover stir thoroughly. Cover again. Cook for 15 more minutes. Shut fire. Keep covered until ready to serve.
- Stir again before serving.
