Haitian Black Rice

Black rice is uniquely Haitian and is absolutely delicious.

Ingredients

Spice mixture

Protocol

  1. Soak 2 cups of the black mushroom in 6 cups of water/chicken broth overnight.
  2. Heat 1/4 cup of oil and 2 teaspoons of spice mixture in a pot over high heat. 4. Add frozen baby lima beans. Salt to taste.
  3. Strain black mushroom with a cheesecloth-lined/paper towels strainer, reserve the black liquid.
  4. Add the liquid and bring to boil.
  5. Add the rice. Lower heat, cover. Cook on low heat.
  6. After 15 minutes uncover stir thoroughly. Cover again. Cook for 15 more minutes. Shut fire. Keep covered until ready to serve.
  7. Stir again before serving.
