Cheese Flan A La Mami (Mami's Puerto Rican cheese flan)

This is my mother-in-law's recipe (slightly modified) that is always a hit at any gathering. My wife and I make it together, it's super easy and super delicious. It has even won an award (Harvard MCB dept best in show baking)

- Pour 1 cup sugar into pan/pot over burner at medium heat (don't use non-stick).
- Without stirring let it get warm until sugar begins to brown.
- Once most of the sugar is melted, use a fork to smash any remains clumps of sugar and lift pan off heat to gently swirl pan to finish melting.
- Quickly pour caramel into bottom of 8x8 baking dish (we use disposable aluminum kind, but can use glass dish as well).
Flan
- Mix all flan ingredients in blender until combined and no chunks of cream cheese are left (do not over mix).
- Pour mix into baking pan with caramel.
- Bake flan for 50-60 minutes (or until toothpick comes out clean) in a "bain-marie" bath. The "bain-marie" bath is key for a good flan! (I use a lasagna glass casserole dish with water that will cover 1/3 of aluminum container).
